2 cups soaked soybeans*

2 qts.water (less for richer milk)

1 Tbsp.honey

1 Tbsp.Oil or 1 tsp. lecithin 1/4

tsp. salt

Directions:

  • Soak 1 cup of soybeans in refrigerator for at least 2 days, pouring off water and covering with clear fresh water.
  • Liquefy 2 cups soaked beans with 2 quarts water.
  • Strain through 2 layers of cheesecloth (or clean dish towel) to extract all liquid.
  • Heat in a double boiler for 15-20 min. Stir occasionally (or just bring to a boil in a kettle).
  • Cool and pour through fine wire strainer right into the blender.
  • Blend well, adding honey, salt and oil.
  • Pour into quart jars and cool in refrigerator. Will remain sweet for several days.

Notes:

Soybean pulp which remains can be made into various dishes.

Add a chopped vanilla bean while scalding the Soya milk. It gives the milk a good flavor.

* 2 ½ cups  dry Soy beans(1 lb) makes 6 ½ qts milk

2 cups dry Soy beans makes 5 qts. milk

1 cups dry beans = 2 ½ cups when soaked
